We created these biscotti for people who are reducing or avoiding sugar, including customers shopping with a diabetic or lower-sugar diet in mind. They may also fit into some keto eating plans depending on your individual dietary goals.
Made with gluten-free ingredients, our sugar-free biscotti use almond flour and are sweetened with erythritol and monk fruit instead of sugar. They contain no GMOs, artificial ingredients, or harmful preservatives.
Sugar-Free Biscotti Made Differently
Removing sugar from biscotti changes more than sweetness. It changes how the dough behaves and how the biscotti must be prepared.
Our sugar-free biscotti are the only biscotti we make that we cool overnight before slicing. Without sugar, the baked loaf is more delicate and can crumble if we try to slice it the same day. Giving it that extra time allows us to cut the loaf properly and create the crisp texture we want.

What do you use instead of sugar?
We sweeten these biscotti with erythritol and monk fruit. There is no added sugar, and no artificial sweeteners, GMOs, or harmful preservatives.
Why do you use erythritol?
Erythritol is the most widely used sugar substitute in baking, and it is approved as a sweetener at the levels used in foods like these. It also behaves properly in our recipe, which matters more than it sounds: we tested other substitutes, allulose among them, and none of them gave us the texture and flavor we wanted. Erythritol does not agree with everyone — some people find sugar alcohols cause digestive discomfort. If you know you are intolerant to erythritol, please avoid this product.
Do they taste the same as your other biscotti?
No, and we would rather say so plainly. Baking without sugar and without wheat flour is genuinely difficult, because sugar and wheat do much of the work in a traditional biscotti's flavor and texture. These are their own thing rather than our classic biscotti with the sugar taken out — less sweet, nutty from the almond flour, and still properly crisp. Different, and very good. Are these biscotti keto?
They may fit into some keto eating plans, but that depends on your individual daily targets rather than on the biscotti alone. Full carbohydrate and nutrition information is listed on each product page so you can decide what works for your plan.
Are they suitable for a diabetic diet?
We bake them with lower-sugar eating in mind, and many of our customers shop with a diabetic diet in mind. We are a bakery rather than a medical provider, so we publish complete nutrition information on every product page and recommend reviewing it with your doctor or dietitian if you are managing blood sugar.
Will these raise my blood sugar?
We cannot answer that for you, and we would be wary of anyone who says they can — responses to any food differ from person to person. Some of our customers who live with diabetes have told us these biscotti work well for them, though we share that as their experience rather than as a promise about yours. Two things we would suggest: read the nutrition panel on the product page before you order, and weigh your portion on a kitchen scale rather than counting pieces. These are artisanal biscotti, so they may vary slightly in size, and weight gives you a far more accurate carbohydrate count. If you are managing blood sugar, please treat these as you would any new food and check with your doctor or dietitian.
Are your sugar-free biscotti gluten-free?
They are made with gluten-free ingredients, but we bake them in a facility that also handles wheat. Because of that shared space we cannot label them gluten-free or guarantee them free from cross-contact, and we would not recommend them if you have celiac disease or a serious gluten allergy. How long do they keep, and do they need refrigeration?
They keep for 3+ months with no refrigeration. Store them in their container with the lid fully shut, in a cool, dark place.
How many biscotti come in a container?
Each container holds 6.5 oz, which is roughly 14-15 biscotti. Pieces may vary a little in size because this is an artisanal product.
When will my order ship, and how long does delivery take?
Orders ship the next business day. Orders placed after 12pm on Friday ship the following Monday. We send USPS Ground Advantage and UPS Ground from our bakery in Petaluma, California, and delivery usually takes 1 to 5 business days depending on where you are.
Do you offer free shipping?
Yes, on orders over $50 after discounts. If a discount code brings your total below $50, adding one more item will bring free shipping back.
