About the Biscotti Themselves

A small story. My father had an almond biscotti recipe he used for more than 50 years. He never changed it. Italians treat recipe adjustments like personal betrayal, and after working in production myself, I finally understand why. The recipe was right the first time.

That's still how we bake. Twice-baked the traditional way. Crisp, but not the kind of crisp that worries your dental hygienist. Loaded with real almonds, pistachios, chocolate, or fruit depending on the flavor — the dough supports the ingredients instead of burying them.
